  • 1.5 lbs boneless, skinless chicken thighs
  • 1.5 lbs small red potatoes, quartered
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the quartered potatoes with 1.5 tablespoons of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
  3. Roast the potatoes for 20 minutes.
  4. While the potatoes roast, pat the chicken thighs dry. In the same bowl (no need to wash), combine the remaining 1.5 tablespoons of olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper. Add the chicken thighs and toss to coat evenly.
  5. After 20 minutes, remove the potatoes from the oven. Add the coated chicken thighs to the baking sheet with the potatoes, arranging them in a single layer.
  6. Return the baking sheet to the oven and roast for another 20-25 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown.
  7. Garnish with fresh parsley before serving.

Notes

  • For crispier potatoes, ensure they are not overcrowded on the baking sheet. You may need to use two baking sheets.
  • You can substitute chicken breasts for thighs, but adjust the cooking time as needed.
