- 1 pound ground pork
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 4 cups coleslaw mix
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon sriracha (optional)
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add ground pork and cook, breaking it up with a spoon, until browned. Drain excess grease.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic and grated ginger and cook for 1 minute more until fragrant.
- Add coleslaw mix to the skillet and stir-fry until slightly tender, about 5-7 minutes.
- In a small bowl, whisk together soy sauce, rice vinegar, honey, and sriracha (if using).
- Pour the sauce over the egg roll mixture and toss to combine. Cook for 2-3 minutes until heated through.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
- For a vegetarian option, use crumbled firm tofu or plant-based ground instead of pork.
- Adjust sriracha to your spice preference.
