A moist and flavorful banana-pineapple bread topped with a creamy cinnamon cream cheese frosting.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 3 ripe bananas, mashed
- 3 eggs
- 1 cup crushed pineapple, drained
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
- In a large bowl, whisk flour, sugar, baking soda, salt, and cinnamon.
- In another bowl, mix mashed bananas, eggs, pineapple, oil, and vanilla.
- Combine wet and dry ingredients. Fold in walnuts if using.
- Pour batter into the pan. Bake for 60-65 minutes or until a toothpick comes out clean.
- Cool bread in pan for 10 minutes, then transfer to a wire rack.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar, cinnamon, and vanilla. Mix well.
- Spread frosting over cooled bread. Slice and serve.
Notes
- Use very ripe bananas for best flavor.
- Store leftovers in the refrigerator for up to 5 days.
- Freeze unfrosted bread for up to 3 months.
