A straightforward recipe for making creamy, dairy-free ranch dressing.

- 1 cup raw cashews, soaked for at least 2 hours and drained
- 1/2 cup water
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon dried dill
- 1/4 teaspoon dried parsley
- 1/4 teaspoon salt, or to taste
- 1/8 teaspoon black pepper
Instructions
- Place the soaked and drained cashews, water, lemon juice, and apple cider vinegar into a high-speed blender.
- Add the onion powder, garlic powder, dill, parsley, salt, and pepper to the blender.
- Blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
- If the dressing is too thick, add water, one tablespoon at a time, until you reach your desired consistency.
- Taste the dressing and adjust salt or seasonings if necessary.
- Transfer the dressing to an airtight container and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- Soaking cashews is necessary for a smooth texture; if you forget to soak them, cover them with boiling water for 15 minutes instead.
- For a thinner dressing, increase the water content slightly.
- Store leftover dressing in the refrigerator for up to one week.
