Ingredients

  • 4 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1/2 cup bamboo shoots, sliced
  • 1/4 cup vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon chili paste
  • 1/2 teaspoon white pepper
  • 1 egg, beaten
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • 1/2 cup tofu, cubed
  • 2 green onions, chopped

Instructions

  1. Bring chicken broth to a boil.
  2. Add mushrooms, bamboo shoots, vinegar, soy sauce, sugar, chili paste, and white pepper. Simmer for 5 minutes.
  3. Stir in cornstarch mixture to thicken the soup.
  4. Slowly pour in beaten egg while stirring.
  5. Add tofu and simmer for 2 minutes.
  6. Garnish with green onions before serving.

Notes

  • Adjust vinegar and chili paste to taste.
  • For vegetarian version, use vegetable broth instead of chicken broth.
