Quick and easy honey sesame chicken stir fry with tender chicken and a flavorful sauce.

- 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sesame seeds
Instructions
- In a medium bowl, toss the chicken with 2 tablespoons soy sauce and cornstarch. Let it marinate for at least 10 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add the broccoli, red bell pepper, and carrot to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
- Add the minced garlic and grated ginger to the skillet and stir-fry for 30 seconds until fragrant.
- In a small bowl, whisk together the honey, remaining 2 tablespoons soy sauce, rice vinegar, and sesame oil. Pour the sauce over the vegetables in the skillet.
- Return the cooked chicken to the skillet and stir to coat everything in the sauce. Cook for an additional 1-2 minutes until the sauce has thickened slightly.
- Garnish with sesame seeds before serving.
Notes
- You can add other vegetables like snap peas, snow peas, or mushrooms.
- Serve over rice or noodles.
