Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds

Instructions

  1. In a medium bowl, toss the chicken with 2 tablespoons soy sauce and cornstarch. Let it marinate for at least 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Add the broccoli, red bell pepper, and carrot to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
  4. Add the minced garlic and grated ginger to the skillet and stir-fry for 30 seconds until fragrant.
  5. In a small bowl, whisk together the honey, remaining 2 tablespoons soy sauce, rice vinegar, and sesame oil. Pour the sauce over the vegetables in the skillet.
  6. Return the cooked chicken to the skillet and stir to coat everything in the sauce. Cook for an additional 1-2 minutes until the sauce has thickened slightly.
  7. Garnish with sesame seeds before serving.

  • You can add other vegetables like snap peas, snow peas, or mushrooms.
