Description
Tender honey garlic chicken bites served over creamy parmesan rice.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup Arborio rice
- 3 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- Salt and black pepper to taste
Instructions
- In a bowl, combine chicken pieces, soy sauce, honey, olive oil, minced garlic, grated ginger, and red pepper flakes (if using). Marinate for at least 30 minutes.
- Heat a large skillet over medium-high heat. Add chicken and marinade. Cook until chicken is browned and cooked through, about 8-10 minutes.
- While chicken cooks, in a separate saucepan, bring chicken broth to a simmer.
- In another saucepan, melt butter over medium heat. Add Arborio rice and toast for 1-2 minutes until lightly golden.
- Gradually add simmering chicken broth to the rice, one ladleful at a time, stirring constantly until each addition is absorbed before adding the next. Continue until rice is creamy and al dente, about 20-25 minutes.
- Stir in Parmesan cheese. Season with salt and pepper.
- Serve honey garlic chicken bites over the creamy Parmesan rice.
Notes
- For extra flavor, you can garnish with chopped fresh parsley.
- Adjust red pepper flakes to your spice preference.
