Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup Arborio rice
  • 3 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and black pepper to taste

Instructions

  1. In a bowl, combine chicken pieces, soy sauce, honey, olive oil, minced garlic, grated ginger, and red pepper flakes (if using). Marinate for at least 30 minutes.
  2. Heat a large skillet over medium-high heat. Add chicken and marinade. Cook until chicken is browned and cooked through, about 8-10 minutes.
  3. While chicken cooks, in a separate saucepan, bring chicken broth to a simmer.
  4. In another saucepan, melt butter over medium heat. Add Arborio rice and toast for 1-2 minutes until lightly golden.
  5. Gradually add simmering chicken broth to the rice, one ladleful at a time, stirring constantly until each addition is absorbed before adding the next. Continue until rice is creamy and al dente, about 20-25 minutes.
  6. Stir in Parmesan cheese. Season with salt and pepper.
  7. Serve honey garlic chicken bites over the creamy Parmesan rice.
