Ingredients

- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 (28 ounce) cans crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon sugar
- 1/2 cup fresh basil leaves, chopped
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in crushed tomatoes, vegetable broth, and sugar.
- Bring to a simmer, then reduce heat and cook for at least 20 minutes, or longer for deeper flavor.
- Stir in fresh basil.
- Season with salt and black pepper to taste.
- Serve hot.
Notes
- For a creamier soup, stir in 1/2 cup of heavy cream or coconut milk before serving.
- Garnish with extra basil leaves or a swirl of cream.
