Ingredients

- 1 cup granulated sugar
- 1/4 cup light corn syrup
- 2 large egg whites
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
Instructions
- Combine sugar, corn syrup, and 1/4 cup water in a saucepan.
- Cook over medium heat, stirring until sugar dissolves.
- Bring to a boil and cook without stirring until the syrup reaches 240°F (115°C) on a candy thermometer.
- While the syrup cooks, beat egg whites and cream of tartar in a clean, dry bowl until stiff peaks form.
- Slowly pour the hot syrup into the beaten egg whites while beating on high speed.
- Continue beating until the mixture is thick, glossy, and cooled to room temperature.
- Stir in the vanilla extract.
- Spoon into a jar and store in the refrigerator.

- Ensure your bowl and beaters are completely grease-free for proper egg white whipping.
- The fluff will thicken as it cools.
