  3. Bring to a boil and cook without stirring until the syrup reaches 240°F (115°C) on a candy thermometer.
  4. While the syrup cooks, beat egg whites and cream of tartar in a clean, dry bowl until stiff peaks form.
  5. Slowly pour the hot syrup into the beaten egg whites while beating on high speed.
  6. Continue beating until the mixture is thick, glossy, and cooled to room temperature.
  7. Stir in the vanilla extract.
  8. Spoon into a jar and store in the refrigerator.
