Simple, single-serving cheesecake jars providing a high protein dessert option.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup Greek yogurt, plain, non-fat
  • 1/4 cup protein powder, vanilla or unflavored
  • 1/4 cup sweetener (stevia, erythritol, or sugar substitute)
  • 1 teaspoon vanilla extract
  • 1/4 cup graham cracker crumbs (or low-carb alternative)
  • 1 tablespoon melted butter (or coconut oil)

Instructions

  1. Mix the graham cracker crumbs and melted butter in a small bowl.
  2. Press the crumb mixture evenly into the bottom of two small jars or ramekins.
  3. In a separate bowl, beat the softened cream cheese until smooth.
  4. Add the Greek yogurt, protein powder, sweetener, and vanilla extract to the cream cheese.
  5. Mix until all ingredients are fully combined and the mixture is smooth.
  6. Spoon or pipe the cheesecake filling over the crust layer in the jars.
  7. Refrigerate for at least 2 hours, or until firm.
  8. Top with desired toppings before serving.
