Simple recipe for chicken nuggets that incorporate finely chopped vegetables.

- 1 pound ground chicken
- 1/2 cup finely grated zucchini, squeezed dry
- 1/4 cup finely grated carrot
- 1/4 cup finely chopped spinach
- 1/4 cup breadcrumbs
- 1 large egg
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup panko breadcrumbs for coating
- Cooking spray or oil for cooking
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) or prepare an air fryer.
- In a large bowl, combine the ground chicken, grated zucchini, grated carrot, chopped spinach, 1/4 cup breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined; do not overmix.
- Shape the mixture into nugget shapes, about 1/2 inch thick.
- Place the panko breadcrumbs in a shallow dish.
- Dredge each nugget in the panko breadcrumbs, pressing gently to coat all sides.
- Place the coated nuggets on a baking sheet lined with parchment paper or in the air fryer basket. Spray lightly with cooking spray or brush with oil.
- Bake for 15-18 minutes, flipping halfway through, until golden brown and cooked through (internal temperature reaches 165 degrees Fahrenheit or 74 degrees Celsius). If using an air fryer, cook for 10-12 minutes, shaking halfway.
- Serve immediately.
Notes
- You can substitute ground turkey for ground chicken.
- For extra crispiness, you can shallow fry the nuggets instead of baking.
- These nuggets freeze well after cooking; cool completely, then store in an airtight container in the freezer. Reheat in the oven or air fryer.
