Ingredients

  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chopped potatoes
  • 1 cup chopped green beans
  • 1 cup corn kernels
  • 1 cup frozen peas
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and diced tomatoes. Bring to a boil.
  5. Add potatoes, green beans, and corn. Reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
  6. Stir in frozen peas, basil, and oregano. Cook for 5 minutes more.
  7. Season with salt and pepper to taste.
  8. Serve hot.
