- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (14.5 oz) can diced tomatoes
- 1 (32 oz) carton beef broth
- 1 packet taco seasoning
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, crushed tortilla chips
Instructions
- Brown ground beef in a large pot over medium heat. Drain excess grease.
- Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add kidney beans, black beans, corn, diced tomatoes with green chilies, diced tomatoes, and beef broth to the pot.
- Stir in taco seasoning, chili powder, and cumin.
- Bring the soup to a boil, then reduce heat and simmer for at least 20 minutes to allow flavors to meld.
- Season with salt and pepper to taste.
- Serve hot with your favorite toppings.
Notes
- For a spicier soup, add a pinch of cayenne pepper or a diced jalapeño.
- This soup can be made ahead of time and reheats well.
- Leftovers can be frozen for future meals.
