- 1 pound boneless, skinless chicken breasts
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) Rotel diced tomatoes with green chilies, undrained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet (1 ounce) taco seasoning
- 1 cup chicken broth
- Optional: sour cream, shredded cheese, avocado for serving
Instructions
- Place chicken breasts in the bottom of your slow cooker.
- Add black beans, corn, Rotel, onion, and garlic over the chicken.
- Sprinkle taco seasoning over the ingredients.
- Pour chicken broth into the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and shreds easily.
- Shred chicken with two forks.
- Stir shredded chicken back into the slow cooker with the vegetables and sauce.
- Serve warm with optional toppings.

- Adjust spice level by using mild or hot Rotel.
