Ingredients

  • 1/2 cup plain Greek yogurt
  • 1/2 cup honey
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream together peanut butter, Greek yogurt, honey, and coconut oil until smooth.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk, beginning and ending with dry ingredients. Mix until just combined.
  6. Fold in chocolate chips.
  7. Pour batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Cut into squares.
