Ingredients

- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups vegetable broth
- 1 cup chopped mixed vegetables (e.g., potatoes, sweet potatoes, parsnips)
- 1/2 cup chopped kale or spinach
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in vegetable broth and add chopped mixed vegetables, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
- Stir in kale or spinach and cook until wilted, about 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- You can add other root vegetables like turnips or rutabaga.
- For a creamier soup, blend a portion of the soup before adding the greens.
- Garnish with fresh parsley if desired.
