Easy and flavorful Hawaiian BBQ Chicken and Pineapple Foil Packets. A complete meal cooked in foil for minimal cleanup.

- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup fresh pineapple chunks
- 1/2 cup BBQ sauce
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- Preheat your grill or oven to 400°F (200°C).
- In a bowl, whisk together the BBQ sauce, soy sauce, brown sugar, rice vinegar, ginger, and garlic powder.
- Add the chicken pieces to the bowl and toss to coat.
- Tear off four large pieces of aluminum foil.
- Divide the chicken and pineapple chunks evenly among the four foil pieces.
- Pour any remaining sauce over the chicken and pineapple.
- Seal the foil packets tightly.
- Place the packets on the grill or in the oven.
- Cook for 20-25 minutes, or until the chicken is cooked through.
- Carefully open the foil packets and serve hot. Garnish with green onions if desired.
Notes
- You can substitute chicken breasts for thighs, but adjust cooking time as needed.
- Feel free to add other vegetables like bell peppers or onions to the packets.
- Ensure the foil is sealed well to prevent leaks.
