  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup low-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato paste
  • 2 pounds potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash with milk and butter. Season with salt and pepper.
  3. While potatoes are boiling, heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  4. Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
  5. Stir in garlic, thyme, rosemary, salt, and pepper. Cook for 1 minute more until fragrant.
  6. Pour in chicken broth, Worcestershire sauce, and tomato paste. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
  7. Spoon the turkey mixture into a 9×13 inch baking dish.
  8. Top evenly with the mashed potatoes, spreading them to cover the turkey filling. You can create decorative peaks with a fork if desired.
  9. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
  10. Let stand for 5-10 minutes before serving.
