Simple recipe for grilling lamb chops seasoned with fresh rosemary.
Ingredients

- 4 lamb loin chops (about 1 inch thick)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Combine olive oil, minced garlic, chopped rosemary, salt, and pepper in a small bowl.
- Place lamb chops in a shallow dish and rub the oil mixture evenly over both sides of the chops.
- Marinate the chops in the refrigerator for at least 30 minutes, or up to 4 hours.
- Preheat your grill to medium-high heat.
- Place the chops on the hot grill.
- Grill for 3 to 4 minutes per side for medium-rare, or adjust time for your preferred doneness.
- Remove chops from the grill and let them rest for 5 minutes before serving.
Notes
- For best flavor, use fresh rosemary instead of dried.
- You can substitute thyme for rosemary if desired.
