Ingredients

- 4 ears of corn
- 1 (15 ounce) can black beans, rinsed and drained
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Grill corn for 10-15 minutes, turning occasionally, until lightly charred.
- Let corn cool, then cut kernels off the cob.
- In a large bowl, combine grilled corn kernels, black beans, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, chili powder, cumin, salt, and pepper.
- Pour dressing over the corn mixture and toss to combine.
- Serve immediately or chill for later.

- You can substitute canned corn for fresh corn if needed.
- Adjust the amount of chili powder and cumin to your spice preference.
