- 12 corn tortillas
- 1 pound cooked shredded chicken or cheese filling
- 1 tablespoon vegetable oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 (4 ounce) can green chiles, diced
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup shredded Monterey Jack cheese
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
- Prepare the sauce: Heat the vegetable oil in a saucepan over medium heat. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook for 1 minute more.
- Stir in the flour and cook for 1 minute. Gradually whisk in the chicken broth until smooth.
- Add the diced green chiles, cumin, and oregano. Bring the mixture to a simmer, stirring occasionally, until the sauce thickens slightly, about 5 to 7 minutes. Season with salt and pepper.
- Warm the tortillas briefly in a dry skillet or microwave to make them pliable.
- Dip each tortilla into the warm green chile sauce, coating both sides.
- Fill each tortilla with your choice of shredded chicken or cheese. Roll up the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas.
- Pour any remaining sauce over the rolled tortillas.
- Sprinkle the shredded Monterey Jack cheese evenly over the top.
- Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.
Notes
- For a richer sauce, substitute 1/2 cup of the chicken broth with heavy cream.
- If you prefer a spicier sauce, use hot green chiles instead of mild.
- You can substitute store-bought green enchilada sauce for steps 2 through 4 to save time.
