			- 2 lbs small red or Yukon Gold potatoes, quartered
 - 1/4 cup olive oil
 - 1 tsp dried oregano
 - 1/2 tsp dried thyme
 - Salt and black pepper to taste
 - 8 oz feta cheese, crumbled
 - 4 oz cream cheese, softened
 - 2 tbsp Greek yogurt
 - 1 clove garlic, minced
 - 1 tbsp fresh lemon juice
 - Fresh parsley, chopped, for garnish
 
Instructions
- Preheat oven to 400°F (200°C).
 - In a large bowl, toss potatoes with olive oil, oregano, thyme, salt, and pepper.
 - Spread potatoes in a single layer on a baking sheet.
 - Roast for 30-40 minutes, or until tender and golden brown, flipping halfway through.
 - While potatoes are roasting, combine feta cheese, cream cheese, Greek yogurt, garlic, and lemon juice in a food processor.
 - Process until smooth and creamy.
 - Spread whipped feta on a serving platter.
 - Arrange roasted potatoes over the whipped feta.
 - Garnish with fresh parsley.
 
Notes
- For crispier potatoes, increase oven temperature to 425°F (220°C) for the last 10 minutes of roasting.
 - Adjust garlic and lemon juice to your preference.
 - You can add a pinch of red pepper flakes to the whipped feta for a touch of heat.
