A refreshing orzo pasta salad with classic Greek flavors.
Ingredients

- 1 cup orzo pasta
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook orzo pasta according to package directions. Drain and rinse with cold water to cool.
- In a large bowl, combine the cooled orzo, cucumber, tomatoes, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
- Pour the dressing over the orzo mixture.
- Toss gently until all ingredients are evenly coated.
- Chill for at least 30 minutes before serving.
Notes
- You can add grilled chicken or chickpeas for extra protein.
- Adjust the amount of lemon juice to your taste preference.
