Ingredients

  • 2 (8 ounce) beef sirloin steaks
  • 1 tablespoon ghost pepper powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup bourbon
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steaks dry with paper towels.
  2. In a small bowl, mix ghost pepper powder, salt, and black pepper.
  3. Rub the spice mixture evenly over both sides of the steaks.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Sear the steaks for 3-5 minutes per side for medium-rare, or to your desired doneness. Remove steaks from skillet and set aside.
  6. Add shallot to the skillet and cook until softened, about 2 minutes.
  7. Add garlic and cook for 30 seconds until fragrant.
  8. Pour in the bourbon and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1 minute.
  9. Stir in heavy cream, Worcestershire sauce, and smoked paprika.
  10. Bring the sauce to a simmer and cook until thickened, about 3-5 minutes.
  11. Return the steaks to the skillet and spoon the sauce over them.
  12. Cook for another minute to heat through.
  13. Garnish with fresh parsley before serving.
