  • 8 bone-in, skin-on chicken thighs
  • 4 garlic cloves, minced
  • 1/4 cup olive oil
  • Zest and juice of 1 lemon
  • 2 tsp dried oregano
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 1 tsp paprika (smoked or sweet)
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • Optional: pinch of red pepper flakes
  • Optional garnish: chopped parsley and lemon wedges

Instructions

  1. In a large bowl or zip-top bag, combine olive oil, garlic, lemon zest and juice, oregano, thyme, paprika, salt, pepper, and optional red pepper flakes.
  2. Add chicken thighs and toss to coat. Rub some marinade under the skin if possible.
  3. Cover and refrigerate for at least 2 hours or overnight for best flavor.
  4. Remove chicken from the fridge 30 minutes before cooking. Preheat oven to 425°F (220°C).
  5. Place chicken skin-side up on a foil-lined baking sheet or in a cast-iron skillet with space between each piece.
  6. Roast for 35–40 minutes, or until internal temperature reaches 175°F.
  7. For crispier skin, broil on high for 2–3 minutes at the end, watching closely.
  8. Let rest for 5–10 minutes. Garnish with fresh parsley and lemon wedges before serving.
