Ingredients

  • 2 lbs chicken pieces (drumsticks, thighs)
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 4 cloves garlic, minced
  • 1 cup buttermilk
  • Vegetable oil for frying

Instructions

  1. In a bowl, mix flour, cornstarch, salt, pepper, paprika, and cayenne pepper.
  2. Place chicken pieces in a separate bowl and cover with buttermilk. Let sit for 30 minutes.
  3. Remove chicken from buttermilk, letting excess drip off.
  4. Add minced garlic to the flour mixture and mix well.
  5. Dredge each piece of chicken thoroughly in the seasoned flour mixture, pressing to coat.
  6. Heat vegetable oil in a deep skillet to 350 degrees F (175 degrees C).
  7. Carefully place chicken pieces into the hot oil, avoiding overcrowding the pan.
  8. Fry for 6-8 minutes per side, until golden brown and cooked through (internal temperature reaches 165 degrees F or 74 degrees C).
  9. Remove chicken and place on a wire rack to drain excess oil.

Notes

  • For extra crispiness, double dredge the chicken: coat in flour, dip briefly back into buttermilk, then coat in flour again.
