- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- 1 cup cornmeal
- 1/2 cup vegetable oil for frying
Instructions
- Slice tomatoes into 1/4-inch thick rounds.
- Combine flour, salt, and pepper in a shallow dish.
- Dip tomato slices in beaten eggs, then coat with cornmeal.
- Heat oil in a skillet over medium heat.
- Fry tomatoes until golden brown, about 2-3 minutes per side.
- Drain on paper towels before serving.
Notes
- Use firm green tomatoes for best results.
- Serve with remoulade or ranch dressing.
- Leftovers can be reheated in an air fryer.
