Ingredients

- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1 large egg
- 3/4 cup milk
- 1/4 cup melted butter
- 2 cups fresh peaches, peeled and diced
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk the egg, milk, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the diced peaches.
- Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 375°F (190°C).
- Carefully drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pot.
- Fry for 3-4 minutes per side, until golden brown and cooked through.
- Remove fritters with a slotted spoon and drain on paper towels.
- Dust with powdered sugar before serving.
