Description

Make a batch of these breakfast burritos ahead of time and freeze them for quick morning meals.


Ingredients

  • 12 large flour tortillas
  • 1 tablespoon olive oil
  • 1 pound breakfast sausage, casings removed
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup shredded cheddar cheese
  • 8 large eggs
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup salsa (optional, for serving)

Instructions

  1. Cook the sausage in a large skillet over medium heat, breaking it up as it cooks. Drain off excess grease.
  2. Add the chopped onion and bell pepper to the skillet with the sausage. Cook until the vegetables soften, about 5-7 minutes. Remove from heat.
  3. In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  4. Pour the egg mixture into the skillet with the sausage and vegetables. Cook over medium-low heat, stirring gently until the eggs are set. Do not overcook.
  5. Stir in the shredded cheddar cheese until melted.
  6. Lay out the flour tortillas. Spoon an equal amount of the egg and sausage mixture down the center of each tortilla.
  7. Fold in the sides of the tortilla, then roll tightly from the bottom up to create a burrito.
  8. Wrap each burrito tightly in plastic wrap, then wrap again in aluminum foil.
  9. Place the wrapped burritos in a freezer-safe bag or container. Freeze for up to 3 months.
  10. To reheat, remove foil and plastic wrap. Wrap the burrito in a damp paper towel and microwave for 2-3 minutes, turning halfway, or bake in a 350 degree oven until heated through.

Notes

  • You can substitute ground turkey or black beans for the sausage to change the flavor.
  • For best results when freezing, make sure the filling is completely cooled before wrapping.
  • If you like a spicier burrito, add diced jalapeños with the onion and pepper.
