- 4 ears corn, husked
- 4 tablespoons unsalted butter, softened
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 cup cotija cheese, crumbled
- 2 tablespoons fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Preheat your grill to medium heat.
- In a small bowl, mix the softened butter with chili powder, smoked paprika, cayenne pepper, and salt until combined.
- Spread the chili butter evenly over all sides of each ear of corn.
- Place the corn directly on the grill grates.
- Grill for 10 to 12 minutes, turning occasionally, until the corn is lightly charred and cooked through.
- Remove the corn from the grill.
- Roll each ear in crumbled cotija cheese and chopped cilantro.
- Serve immediately with lime wedges for squeezing over the top.
Notes
- Adjust the cayenne pepper amount based on your preferred spice level.
- You can use mayonnaise instead of butter for a different texture base.
