Ingredients

- 1 medium head cabbage, chopped
- 2 large onions, diced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 2 green bell peppers, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 can diced tomatoes (14 oz)
- 1 tbsp olive oil
- 1 tsp black pepper
- 1 tsp paprika
- 1/2 tsp salt
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, garlic, carrots, celery, and bell peppers. Cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Add cabbage, diced tomatoes, black pepper, paprika, and salt.
- Reduce heat to low, cover, and simmer for 30 minutes until vegetables are tender.
- Serve hot.
Notes
- Store leftovers in the refrigerator for up to 5 days.
- For extra flavor, add a splash of lemon juice before serving.
- This soup freezes well for up to 3 months.
