Ingredients

  • 6 cups kale, chopped
  • 2 medium apples, cored and sliced
  • 1/2 cup pecans, toasted
  • 1/4 cup dried cranberries
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and chop the kale. Place the kale in a large bowl.
  2. Add the sliced apples, toasted pecans, and dried cranberries to the bowl.
  3. In a small jar, combine the olive oil, apple cider vinegar, maple syrup, and Dijon mustard.
  4. Close the jar and shake well to mix the dressing.
  5. Pour the dressing over the salad ingredients.
