A simple salad featuring crisp apples, hearty kale, and a light vinaigrette.
Ingredients
Scale
- 6 cups kale, chopped
- 2 medium apples, cored and sliced
- 1/2 cup pecans, toasted
- 1/4 cup dried cranberries
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon Dijon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Wash and chop the kale. Place the kale in a large bowl.
- Add the sliced apples, toasted pecans, and dried cranberries to the bowl.
- In a small jar, combine the olive oil, apple cider vinegar, maple syrup, and Dijon mustard.
- Close the jar and shake well to mix the dressing.
- Pour the dressing over the salad ingredients.
- Toss gently until everything is coated.
- Season with salt and pepper before serving.
Notes
- Toast pecans in a dry skillet over medium heat for 3-5 minutes until fragrant.
- Massage the kale with a small amount of dressing for 1 minute before adding other ingredients to soften it.
