These muffins are light, fluffy, and packed with lemon flavor.
Ingredients

			- 2 cups all-purpose flour
 - 1 cup sugar
 - 1 tablespoon baking powder
 - 1/2 teaspoon salt
 - 1/2 cup unsalted butter, melted
 - 1 cup milk
 - 2 large eggs
 - 1 tablespoon lemon zest
 - 1/4 cup fresh lemon juice
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a bowl, mix flour, sugar, baking powder, and salt.
 - In another bowl, combine melted butter, milk, eggs, lemon zest, and lemon juice.
 - Pour the wet ingredients into the dry ingredients and mix until just combined.
 - Fill muffin cups 2/3 full with batter.
 - Bake for 18-20 minutes or until a toothpick comes out clean.
 - Let cool before serving.
 
Notes
- Store muffins in an airtight container.
 - These muffins freeze well.
 - Adjust lemon juice for more or less tartness.
