Ingredients

- 1 pound ground breakfast sausage
- 1/2 cup chopped onion
- 1/2 cup chopped red bell pepper
- 10 large eggs
- 1 cup milk
- 1 teaspoon everything bagel seasoning, plus more for topping
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups cubed day-old bread
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Cook sausage, onion, and bell pepper in a large skillet over medium heat until sausage is browned and vegetables are tender. Drain off excess fat.
- In a large bowl, whisk together eggs, milk, everything bagel seasoning, salt, and pepper.
- Add the cooked sausage mixture, bread cubes, and cheddar cheese to the egg mixture. Stir to combine.
- Pour the mixture into the prepared baking dish. Sprinkle with additional everything bagel seasoning.
- Bake for 30-35 minutes, or until set and golden brown.
- Let stand for 5 minutes before serving.
Notes
- You can substitute other types of cheese.
- Use gluten-free bread for a gluten-free option.
- Prepare the casserole the night before and bake in the morning.
