This no-bake Eggnog Cheesecake is rich, creamy, and spiced with nutmeg, all set on a festive gingersnap crust—perfect for the holidays.

- 2 cups gingersnap cookie crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 cup full-fat eggnog
- 2 tsp rum or 1 tsp rum extract (optional)
- 1 tsp vanilla extract
- 1/2 tsp ground nutmeg
- 1 envelope unflavored gelatin (about 2 1/4 tsp)
- 1/4 cup cold water
- Whipped cream (for topping)
- Ground nutmeg or cinnamon (for dusting)
Instructions
- Crush the gingersnap cookies into fine crumbs and mix with sugar and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan. Chill while preparing the filling.
- In a small saucepan, sprinkle gelatin over cold water and let bloom for 5 minutes. Then gently heat to dissolve.
- In a large bowl, beat softened cream cheese and sugar until smooth and fluffy.
- Add eggnog, rum (if using), vanilla, and nutmeg. Mix until well combined.
- Slowly pour in the cooled gelatin mixture and beat just until incorporated.
- Pour the filling over the chilled crust and smooth the top.
- Cover and refrigerate for at least 6 hours or overnight until set.
- Remove from springform pan, decorate with whipped cream, and dust with nutmeg or cinnamon before serving.
