This easy no-bake Éclair Cake recipe features layers of graham crackers, creamy vanilla pudding, and a rich chocolate topping. Perfect for make-ahead desserts and a guaranteed crowd-pleaser!

 - 2 boxes (3.4 oz each) vanilla instant pudding mix
 - 3 1/2 cups cold whole milk
 - 1 tub (8 oz) Cool Whip or 2 cups homemade whipped cream
 - 1 can (16 oz) chocolate frosting
 
Instructions
- In a large mixing bowl, whisk together vanilla pudding mix and cold milk until thickened, about 2-3 minutes.
 - Gently fold in the Cool Whip until fully combined and smooth.
 - In a 9×13-inch baking dish, place a single layer of graham crackers at the bottom.
 - Spread half of the pudding mixture evenly over the crackers.
 - Add another layer of graham crackers, followed by the remaining pudding mixture.
 - Top with a final layer of graham crackers.
 - Microwave the chocolate frosting for 15-20 seconds to soften, then spread evenly over the top layer.
 - Cover with plastic wrap and refrigerate for at least 6 hours or overnight for best results.
 - Slice and serve chilled.
 
Notes
- For a homemade chocolate topping, use a ganache made with 1/2 cup heavy cream and 1 cup chopped chocolate.
 - For a thicker pudding layer, reduce the milk slightly by 1/4 cup.
