Description
A simple casserole featuring three types of beans with taco seasoning.
Ingredients

- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (10 ounce) can enchilada sauce
- 1 cup salsa
- 1 packet (1 ounce) taco seasoning mix
- 1 cup cooked ground beef or turkey (optional)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream (for topping)
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
- In a large bowl, combine the black beans, kidney beans, and pinto beans.
- Stir in the enchilada sauce, salsa, and taco seasoning mix until everything is evenly coated.
- If using, fold in the cooked ground meat.
- Spread the bean mixture evenly into the prepared baking dish.
- Sprinkle the shredded cheddar cheese over the top of the mixture.
- Bake for 25 to 30 minutes, or until the cheese is melted and the casserole is heated through.
- Remove from the oven and let it stand for 5 minutes before serving.
- Top each serving with sour cream.
Notes
- For a vegetarian version, omit the ground meat.
- You can substitute Monterey Jack cheese for cheddar.
- Serve with shredded lettuce or sliced olives if desired.
