Instructions

  1. Wash and pit the peaches. Slice them thinly.
  2. In a large, heavy-bottomed saucepan, combine the sliced peaches, sugar, and lemon juice.
  3. Stir well to combine. Let the mixture sit for about 10-15 minutes to allow the sugar to draw out the juices from the peaches.
  4. Place the saucepan over medium-high heat. Bring the mixture to a rolling boil, stirring occasionally.
  5. Reduce the heat to medium and continue to cook, stirring frequently, until the jam thickens. This can take 30-45 minutes. Skim off any foam that rises to the surface.
  6. To test for doneness, place a small amount of jam on a chilled plate. If it gels, it is ready.
  7. Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch headspace.
  8. Wipe the rims of the jars clean and screw on the lids.
  9. Process the jars in a boiling water bath for 10 minutes.
  10. Remove the jars from the water bath and let them cool completely on a wire rack.
