Simple recipe for individual meatloaf portions baked in muffin tins.

- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1 egg, lightly beaten
- 1/4 cup finely chopped onion
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup ketchup (for topping)
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 12-cup muffin tin.
- In a large bowl, combine the ground beef, bread crumbs, milk, egg, chopped onion, salt, and pepper. Mix gently until just combined. Do not overmix.
- Divide the meat mixture evenly among the 12 muffin cups. Press the mixture lightly into the bottom and up the sides to form small cups.
- Spoon about 1 teaspoon of ketchup over the top of each mini meatloaf.
- Bake for 20 to 25 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
- Let the meatloaves cool in the tin for 5 minutes before removing them.
Notes
- You can substitute ground turkey or a mix of beef and pork for the ground beef.
- For a sweeter glaze, mix the ketchup with 1 teaspoon of brown sugar.
