Ingredients
Scale
- 1 cup dry elbow macaroni
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup cooked, shredded chicken (optional, for the bowl)
- 1/2 cup KFC-style gravy (optional, for the bowl)
Instructions
- Cook the macaroni according to package directions until al dente. Drain well.
- In a saucepan over medium heat, melt the butter.
- Whisk in the flour and cook for one minute, stirring constantly.
- Gradually whisk in the milk until the mixture is smooth.
- Cook, stirring often, until the sauce thickens enough to coat the back of a spoon. Do not boil.
- Remove the saucepan from the heat. Stir in the cheddar cheese and Monterey Jack cheese until melted and smooth.
- Season the cheese sauce with salt and pepper.
- Add the drained macaroni to the cheese sauce and stir to coat completely.
- To assemble the bowl, layer half of the macaroni and cheese, then add shredded chicken if using, then top with the remaining macaroni and cheese.
- Pour gravy over the top layer if desired. Serve immediately.
Notes
- For a creamier sauce, use whole milk.
- You can use pre-cooked rotisserie chicken for the shredded chicken component.
- Adjust the amount of salt and pepper to your taste.
