Simple recipe for quick, no-bake energy bites using peanut butter.
Ingredients

- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/3 cup honey or maple syrup
- 1/4 cup ground flaxseed
- 1/4 cup mini chocolate chips (optional)
- 1 teaspoon vanilla extract
Instructions
- Combine all ingredients in a medium bowl.
- Mix well until everything is thoroughly combined.
- Chill the mixture in the refrigerator for 15 minutes.
- Roll the mixture into small, bite-sized balls (about 1 inch in diameter).
- Store the energy bites in an airtight container in the refrigerator.
Notes
- For a different flavor, substitute sunflower seed butter for peanut butter.
- If the mixture is too dry, add one teaspoon of water or milk at a time until it holds together.
- Roll the balls in shredded coconut for an outer coating, if desired.
