  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup buffalo sauce
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup fresh parsley
  • 2 tablespoons fresh chives
  • 1 tablespoon fresh dill
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled blue cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place chicken breasts in a baking dish and pour buffalo sauce over them.
  3. Bake for 20-25 minutes, or until chicken is cooked through.
  4. While chicken is baking, prepare the green goddess dressing. In a small bowl, whisk together Greek yogurt, mayonnaise, parsley, chives, dill, lemon juice, and garlic. Season with salt and pepper.
  5. Once chicken is cooked, shred it using two forks.
