  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp turmeric powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 eggs, beaten (optional)
  • 1 tbsp soy sauce
  • 1 tbsp chopped green onions for garnish

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add onion and garlic. Cook until soft.
  3. Stir in turmeric, salt, and black pepper.
  4. Add peas and carrots. Cook for 3 minutes.
  5. Push vegetables to one side of the pan. Pour beaten eggs onto the other side. Scramble until cooked.
  6. Add rice and soy sauce. Mix well.
  7. Cook for 5 minutes, stirring occasionally.
  8. Garnish with green onions before serving.
