Easy Chicken Ramen Bowl is a cozy and flavorful meal made with shredded chicken, vegetables, and a jammy egg in a savory broth.

- 2 cups cooked shredded chicken
- 4 cups chicken broth (low-sodium preferred)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 3 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1 cup thinly sliced carrots
- 2 handfuls fresh spinach
- 2–3 soft-boiled eggs
- 3 packs ramen noodles (discard seasoning)
- 2 green onions, sliced (for topping)
- Optional: 1 tsp rice vinegar or mirin, chili oil, sesame seeds
Instructions
- Bring a pot of water to a boil. Gently lower eggs and boil for 6.5–7 minutes. Transfer to ice bath, peel when cool.
- In a large pot, heat sesame oil over medium. Add garlic and ginger, sauté until fragrant (1–2 minutes).
- Add chicken broth, soy sauce, and optional vinegar or mirin. Simmer for 5 minutes.
- Add sliced carrots and simmer for another 5 minutes until tender.
- Add spinach and shredded chicken, simmer until warmed through (2–3 minutes).
- Meanwhile, cook ramen noodles separately according to package. Drain and set aside.
- Slice eggs in half.
- To serve: Add noodles to each bowl, ladle broth, chicken, and veggies on top. Add egg halves, green onions, and toppings of choice.
