- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 4 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- 2/3 cup heavy cream
- Fresh raspberries and blueberries (for topping)
- Whipped cream (for decoration)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom and 1 inch up the sides of the pan. Bake for 8–10 minutes, then cool.
- Reduce oven to 325°F (163°C).
- Beat cream cheese until smooth. Add sugar and vanilla, and mix until combined.
- Add eggs one at a time, mixing on low speed. Stir in sour cream and heavy cream until just combined.
- Pour filling into cooled crust and smooth the top.
- Bake for 55–70 minutes, or until edges are set and the center slightly jiggles.
- Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
- Remove from oven and cool to room temperature. Refrigerate for at least 4 hours or overnight.
- Before serving, decorate with whipped cream and top with fresh berries.
Notes
- Use full-fat cream cheese for best texture and flavor.
- Don’t overmix after adding eggs to avoid cracks.
- Chill overnight for the smoothest texture and easiest slicing.
- Slice with a hot knife for clean edges.
- Store in the fridge for up to 5 days or freeze for up to 2 months (without toppings).
