Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, toss blueberries with 1/2 cup sugar, cornstarch, lemon juice, and lemon zest. Pour into an 8×8 inch baking dish.
  3. In another bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
  4. In a separate small bowl, combine milk, melted butter, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Drop spoonfuls of the batter evenly over the blueberries in the baking dish.
  7. Sprinkle with coarse sugar if desired.
  8. Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let cool slightly before serving.
