- 4 cups fresh or frozen blueberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 tablespoon coarse sugar, for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, toss blueberries with 1/2 cup sugar, cornstarch, lemon juice, and lemon zest. Pour into an 8×8 inch baking dish.
- In another bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
- In a separate small bowl, combine milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Drop spoonfuls of the batter evenly over the blueberries in the baking dish.
- Sprinkle with coarse sugar if desired.
- Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool slightly before serving.
Notes
- Serve warm with vanilla ice cream or whipped cream.
- For a richer flavor, you can add a pinch of cinnamon to the batter.
- If using frozen blueberries, do not thaw them before using.
