Description
A simple recipe for toast topped with mashed avocado and a fried egg.
Ingredients

- 2 slices bread
- 1 ripe avocado
- 1 large egg
- 1 teaspoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Toast the bread slices to your preference.
- While the bread toasts, heat the olive oil in a small skillet over medium heat.
- Crack the egg into the skillet and fry it until the white is set and the yolk is cooked to your liking.
- Scoop the avocado flesh into a small bowl and mash it with a fork. Season the avocado with salt and pepper.
- Spread the mashed avocado evenly over the two toast slices.
- Carefully place one fried egg on top of each avocado-covered toast slice.
- Season the egg with additional salt and pepper if desired. Serve immediately.
Notes
- You can use any type of bread you prefer.
- For a softer yolk, cook the egg for less time.
- Add red pepper flakes for a bit of heat.
