Ingredients

- 2 cups cooked rice (preferably day-old)
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground turmeric
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 2 eggs, beaten (optional)
- 1 tbsp soy sauce
- 1 tbsp chopped green onions (for garnish)
Instructions
- Heat oil in a large pan over medium heat.
- Add onion and garlic. Sauté until soft.
- Stir in turmeric, salt, and black pepper.
- Add peas and carrots. Cook for 2-3 minutes.
- Push vegetables to one side. Pour beaten eggs into the pan. Scramble until cooked.
- Add rice and soy sauce. Mix well.
- Cook for 3-4 minutes, stirring occasionally.
- Garnish with green onions and serve hot.
Notes
- Use day-old rice for best texture.
- Adjust turmeric for stronger or milder flavor.
- Add protein like chicken or tofu if desired.
