- 1/2 cup corn kernels (canned or frozen, thawed)
- 1/4 cup salsa
- 2 tablespoons plain Greek yogurt or sour cream
- 1/4 avocado, diced
Instructions
- Place the cooked quinoa or rice in a bowl.
- Top the grain with black beans and corn kernels.
- Spoon the salsa over the ingredients.
- Add a dollop of Greek yogurt or sour cream.
- Arrange the diced avocado on top.
- Stir gently before eating.
