Make a Smash Burger with Dad’s Secret Sauce.

- 2 lbs ground beef (80/20 blend)
- 1 large onion, thinly sliced
- 8 slices American cheese
- 8 burger buns
- 1/4 cup butter, melted
- Salt and black pepper to taste
- For Dad’s Secret Sauce:
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp finely chopped dill pickles
- 1 tsp white vinegar
- 1/2 tsp garlic powder
- 1/4 tsp paprika
Instructions
- Prepare Dad’s Secret Sauce by combining all sauce ingredients in a bowl. Mix well and set aside.
- Divide the ground beef into 8 equal balls.
- Heat a cast-iron skillet or flat-top grill over high heat.
- Place the beef balls on the hot surface and immediately smash them flat with a sturdy spatula or burger press.
- Season generously with salt and pepper.
- Cook for 2-3 minutes per side, or until a deep brown crust forms.
- Add a slice of cheese to each patty during the last minute of cooking.
- While the burgers cook, lightly butter the insides of the burger buns and toast them on the skillet until golden brown.
- Assemble the burgers: Place the cheesy patties on the bottom buns. Top with sliced onions and a generous dollop of Dad’s Secret Sauce.
- Cover with the top buns and serve immediately.
Notes
- Use 80/20 ground beef for the best flavor and juiciness.
- Don’t overcrowd the skillet; cook in batches if necessary.
- Smash the burgers thin for a crispy edge.
- Adjust the amount of secret sauce to your liking.
